Tuesday, 20 October, 2026 Food From Poland 49/2026
Tradition and modern technology increasingly go hand in hand in the baking industry. We spoke with Jarosław Stawicki, Sales Manager at Piekarnia Oskroba, about innovation, exports, changing consumer expectations and the future of the baking industry.
A family-owned business, a long baking tradition, proprietary recipes and high-quality, simple ingredients are the foundations of Piekarnia Oskroba, whose history dates back to the 1930s. What has changed over the years?

Over nearly a century, almost everything has changed except what matters most to us. Piekarnia Oskroba remains a family-owned business, while the baking traditions and experience passed down through generations continue to form the foundation of our operations.

The biggest changes have been in production scale and technology. We have evolved from a traditional bakery into a modern company equipped with advanced machinery, state-of-the-art production lines and modern technological infrastructure. This allows us to produce on a large scale while maintaining consistently high quality.

Technology has not replaced tradition. Its role is to support it. Great taste, high quality and simple, clean ingredients remain our top priorities.

Is it possible to freeze baked goods on a large scale without compromising their quality or the use of natural ingredients?

Absolutely. Freezing is one of the most natural ways to extend the shelf life of baked goods. When done properly, it preserves their quality, taste and key characteristics without the need for preservatives.

The key is using the right recipe, high-quality raw materials and carefully controlled production and freezing parameters. At Piekarnia Oskroba, experienced food technologists oversee every stage of the process.

Can you tell us more about Clean Room technology?

Clean Room technology gives us greater control over the conditions in which baked goods are produced and packaged. Its main purpose is to minimize the risk of contamination and maintain a high level of hygiene and production safety.

By controlling air quality and airflow, temperature and conditions in production and packaging areas, we can maintain consistently high product quality.

How do you assess the baking industry today in Poland and globally?

We see the industry as stable but also challenging and rapidly evolving. Bread remains a staple in consumers’ daily diets, but expectations regarding quality, ingredients, freshness, convenience and variety continue to grow.

Polish producers are facing rising costs of raw materials, energy, labor and logistics. At the same time, they are investing in automation and modern technologies. These investments will play a major role in determining competitiveness in the years ahead.

Similar trends can be seen globally, with growing demand for convenient products, natural ingredients and nutritional value.

What do international consumers value about Polish baked goods?

First and foremost, they appreciate the high quality, great taste and variety. Poland has a strong baking tradition, which is an important advantage in international markets. A competitive price-to-quality ratio also plays a significant role.

Simple and natural ingredients are also becoming increasingly important. International consumers are looking for authentic products with distinctive flavors and consistently high quality.

What baked goods does Piekarnia Oskroba offer to international customers?

Our export portfolio is extensive. It includes burger and hot dog buns made from wheat and graham flour, which are particularly well suited to the needs of the foodservice sector.

Another important category is our range of wheat-rye and rye breads. We also offer high-protein breads and products designed for consumers with specific dietary needs.

Traditional bake-off bread for retail stores is also very popular. It allows our international partners to offer customers bread baked fresh on-site, with the aroma, flavor and crispy crust of a freshly baked loaf.

One of our most interesting products is preservative-free toast bread with a shelf life of up to 60 days. This solution was developed by our food technologists following extensive research. A long shelf life is particularly important in export markets because it makes transportation and distribution easier to manage.

Our strength lies in our ability to adapt our offering to different customer needs and develop partnerships across a wide range of international markets.
